Ingredients


Makes: 8 servings
  • Meatballs:
  • 2 lbs (900 g) lean ground beef, chicken, pork, or soy
  • 2 Tbsp (30 ml) Asian Stir-Fry Seasoning
  • 2 Tbsp (30 ml) low sodium or gluten free soy sauce
  • Coleslaw salad:
  • 2 C (500 ml) homemade or store-bought coleslaw
  • 1/2 C (125 ml) Sesame Ginger Dressing, prepared
  • To serve:
  • Butter or iceberg lettuce leaves
  • Chopped cilantro, optional
  • Won ton crisps, optional
  • Wasabi Ginger Aioli, prepared, optional

Preparation


 
  • Preheat oven to 450° F (230° C).
  • Combine all meatball ingredients in a mixing bowl. To prevent sticking, moisten hands with water and form about 2 Tbsp (30 ml) of mixture into evenly shaped meatballs.
  • Arrange meatballs about 1" (2 cm) apart on a Sheet Pan lined with a Bake & Roll. Bake for 5–8 minutes
  • Reduce oven temperature to 350° F (175° C) and continue cooking for about 15 minutes, or until meatballs are fully cooked.
  • Meanwhile, combine coleslaw mix and prepared dressing in a serving bowl.
  • Assemble lettuce wrap. Simply place meatballs in lettuce wrap, top with coleslaw, cilantro, wonton crisps and wasabi ginger aioli as desired.

Tip: Serve with 1 C (250 ml) mixed veggies, in season, your choice, 2 Tbsp (30 ml) prepared Wasabi Ginger Aioli for dipping, and ½ C (125 ml) cooked rice.
